Making your own lemon curd might seem like it's time-consuming and/or difficult at first, but it's quite the opposite! This lemon curd will take otherwise bland recipes to the next level by adding a little zing.
Ingredients:
- 5 egg yolks
- 1/2 cup lemon juice (~3 lemons)
- 2 lemons' zest (~ 2 tbsp)
- 3/4 cups caster sugar
- 1/2 cup unsalted butter
- 1/8 tsp salt
Yields approximately 1 1/2 cups of lemon curd
Mix egg yolks, sugar, lemon zest/juice and salt with a whisk. Bring water to a boil in the lower compartment of a double boiler, then reduce the heat to a low simmer. Place the lemon mix in the upper compartment and cook for 10-15 minutes while continuously stirring. The mixture should thicken and the whisk should leave tracks in the mix once it is thick enough.
Remove from heat and slowly stir in the butter in small portions until it is completely melted. Let cool and store in the fridge. It really is that simple!
