This recipe is my take on a classic German bake-sale cake. With a fluffy bottom, tangy apples and delicious cinnamon crumbs on top, this recipe is easy to make and feeds many. But trust me, what it lacks in sophistication, it more than makes up for in taste!
Ingredients:
Dough:
- 2 1/2 cups (400g) all-purpose flour
- 1 tsp baking powder
- 3 eggs
- 1 cup (200g) caster sugar
- 1 cup (250g) unsalted butter
- 1/2 tsp salt
- 1 pack vanilla sugar
Filling:
- 5-8 apples, depending on size
Crumbs:
- 1 3/4 cups (300g) all-purpose flour
- 3/4 cups (150g) caster sugar
- 3/4 cups (200g) unsalted butter
- 1 tsp cinnamon
Pre-heat the oven to 350F/175C.
Mix all dough ingredients and knead until the dough has an even texture. Cut a piece of parchment paper to fit your baking tray and roll out the dough on the parchment paper, then transfer the parchment paper to the baking tray.
Wash and peel apples. Remove the cores and cut each apple into 8-12 slices. Evenly distribute the apples on top of the dough.
For the crumbs, mix flour, sugar, butter and cinnamon and knead well. Next, you can either pull off small pieces of the dough and drop them on the apples or use a cheese grater and grate the dough right onto the apples (which is what I did).
Bake for around 45 minutes. Aaaand you're done, enjoy! :)
