Bee Sting Cupcakes



I don't want to over-sell these cupcakes, but a friend of mine DID call them heavenly the other day... Either way, this twist on classic German bee sting cakes is truly delicious and easy to make! Particularly in times like these, I really miss home and it's always nice to have a taste of home every now and then.


Ingredients:

Dough:

- 2/3 cups milk (2%)

- 1 tbsp honey

- 1/4 cup unsalted butter

- 2 cups all purpose flour

- 1/2 cup caster sugar

- 2 eggs

- 2 tsp dry yeast

Almond-honey topping:

- 1/4 cup unsalted butter

- 2 tbsp honey

- 1/4 cup brown sugar

- 2/3 cups sliced almonds

Filling:

- 1 2/3 cups milk (2%)

- 2/3 cups caster sugar

- 1/2 cup whipping cream


Yields ~12 cupcakes


 

Mix dry yeast with warm (not hot, should be comfortable to touch!) milk and let sit for aroudn 10 minutes. Add milk to flour, sugar, softened butter, honey and eggs and knead well. Cover with a damp kitchen towel and keep in a warm space for 1-2 hours.


Prepare the filling by heating the milk at medium heat on the stove. Carefully whisk in the instant pudding powder (can be found here) and sugar and continuously mix until the pudding start to boil. Keep whisking for about another minute or until it begins to thicken, then let it cool. Keep it in the fridge for at least an hour.


Pre-heat the oven to 375°F. Evenly distribute dough in a greased muffin tin form. Bake for approximately 15 min or until slightly browned.


In the meantime, prepare the almond-honey topping. Melt butter with brown sugar at medium heat, then add the honey. Once the mix is homogenous, add the almonds. Cook for approximately 5 minutes or until the mixture start to thicken a little.



Remove the muffin tin from the oven and evenly distribute the almond-honey mix on top of the cupcakes as shown above.


Bake for another 5 minutes, then let it cool down completely.



Whip the whipped cream, then add the cooled pudding mix. Once the cupcakes have cooled down, cut them in half horizontally and add a generous tablespoon or two of the filling.
